It’s a versatile recipe that can be made with simple pantry ingredients, and the best part is that it’s a one-pan wonder, making clean-up a breeze. The creamy, cheesy goodness mixed with tender chicken and vegetables will quickly become a family favorite, offering a satisfying and filling meal for any occasion.

Ingredients:
2 cups cooked chicken, shredded (leftovers or rotisserie chicken works well)
4 slices of whole wheat or white bread, cubed
1 ½ cups shredded cheddar cheese
1 cup milk
2 large eggs
1 cup broccoli florets (steamed or blanched)
½ cup diced bell pepper (red or yellow)
1 small onion, chopped
1 clove garlic, minced
1 tbsp olive oil
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
Fresh parsley or chives for garnish (optional)
Directions:
Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter.

Prepare the vegetables: In a skillet, heat olive oil over medium heat. Add the chopped onion, bell pepper, and garlic. Sauté until the onion becomes translucent and the bell pepper softens, about 4-5 minutes. Add the broccoli and sauté for an additional 2-3 minutes, then remove from heat.

Assemble the bake: In a large bowl, whisk together the eggs and milk. Season with thyme, oregano, salt, and pepper. Add the shredded chicken and sautéed vegetables, stirring until evenly mixed. Gently fold in the cubed bread.

Add the cheese: Transfer the bread mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

Bake: Place the dish in the oven and bake for 30-35 minutes, or until the top is golden brown and the casserole has set. A toothpick inserted into the center should come out clean.

Let it cool slightly before serving to allow the dish to firm up. Garnish with fresh parsley or chives for a pop of color and extra flavor.
