4 boneless, skinless chicken breasts (or thighs for more flavor)
1 medium onion, finely chopped
3 cloves garlic, minced
4 cups low-sodium chicken broth

1 teaspoon dried parsley
1/2 teaspoon ground black pepper
1/2 teaspoon salt (or to taste)
1 tablespoon olive oil
2 cups egg noodles (or your preferred type)
1 tablespoon cornstarch (optional, for thickening)

Directions:
Prepare the Chicken: Season the chicken breasts (or thighs) with salt, pepper, thyme, and parsley. Heat olive oil in a large skillet over medium heat, then sear the chicken on both sides for about 2–3 minutes until golden.
