Ingredients:
10 small corn or flour tortillas
1 lb ground beef or shredded chicken
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) enchilada sauce (or homemade)
1 cup diced onions
1-2 cloves garlic, minced
1 cup frozen corn (optional)
1 tsp cumin
1 tsp chili powder
1/2 tsp paprika
1/2 tsp salt (to taste)
1 1/2 cups shredded cheddar cheese (or Mexican blend)
1 1/2 cups shredded Monterey Jack cheese
1/4 cup fresh cilantro, chopped (optional)
Sour cream or guacamole for serving (optional)
Directions:
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter.
In a large skillet, cook the ground beef or shredded chicken over medium heat until fully cooked and browned. If using ground beef, drain any excess fat.
Add diced onions, minced garlic, cumin, chili powder, paprika, and salt to the meat. Cook for another 2-3 minutes, allowing the spices to release their fragrance.
Stir in the black beans and corn (if using) until evenly mixed. Pour in the enchilada sauce and simmer for 5 minutes to allow the flavors to meld.
While the meat mixture simmers, cut the tortillas into quarters or halves.
Spread a thin layer of the meat mixture on the bottom of the prepared baking dish. Top with a layer of tortillas. Repeat this process, layering the meat mixture and tortillas, finishing with a layer of the meat mixture on top.
Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the casserole.
Cover the casserole with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
Remove from the oven and let cool for 5-10 minutes before serving.
