Ingredients:
1 sheet of puff pastry (store-bought or homemade)
1 cup fresh spinach, finely chopped
8 oz cream cheese, softened
½ cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
1 egg, beaten (for egg wash)
Directions:
Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, about 1 minute. Add the chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and let it cool slightly.

Mix the Filling: In a medium bowl, combine the softened cream cheese, mozzarella cheese, Parmesan cheese, the sautéed spinach, and salt and pepper to taste. Stir everything together until smooth and well-blended.

Prepare the Puff Pastry: Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into small squares (about 3 inches in size).

Assemble the Puffs: Place a spoonful of the spinach and cream cheese mixture in the center of each pastry square. Fold the corners of the square over the filling to create a little pocket or triangle. Press the edges with a fork to seal the puffs.
