Ingredients:
1 lb boneless, skinless chicken thighs (or a mix of chicken thighs and breast)
2 tbsp butter
1 medium onion, diced
2 cloves garlic, minced
4 medium potatoes, peeled and diced
3 carrots, peeled and sliced
1 cup corn kernels (fresh, frozen, or canned)
4 cups chicken broth
1 ½ cups heavy cream
1 tsp dried thyme
1 tsp dried parsley
Salt and pepper, to taste
1 tbsp flour (optional, for thickening)
Fresh parsley, chopped (for garnish)
Directions:
Prepare the Chicken: Begin by cutting the chicken into bite-sized pieces. In a large pot or Dutch oven, melt the butter over medium heat. Add the diced chicken pieces and cook until browned and cooked through. Remove the chicken from the pot and set aside.
Sauté the Vegetables: In the same pot, add the diced onion and garlic. Cook for about 2-3 minutes, stirring occasionally, until softened and fragrant.
Cook the Stew: Add the diced potatoes and carrots to the pot, followed by the chicken broth. Bring to a boil and then reduce to a simmer. Cover and cook for about 20-25 minutes, or until the vegetables are tender.
Add Cream and Corn: Once the potatoes and carrots are tender, add the heavy cream, corn kernels, thyme, parsley, salt, and pepper to the pot. Stir to combine. Let it simmer for another 5 minutes.
Thicken the Stew (Optional): If you'd like a thicker stew, whisk the flour into a tablespoon of water to create a slurry and add it to the stew. Stir well and cook for an additional 5 minutes until the stew has thickened.
Final Touches: Return the cooked chicken to the pot and let everything heat through for a few more minutes. Taste and adjust seasoning as needed.
