Ingredients:
4 boneless, skinless chicken breasts, cooked and cubed
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables (peas, carrots, corn)
1/2 cup diced onions
1/2 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups crushed Ritz crackers (or any buttery crackers)
1/4 cup butter, melted
1/2 cup grated Parmesan cheese (optional for extra flavor)
Directions:
Preheat the oven to 350°F (175°C).
In a large bowl, combine the cream of chicken soup, sour cream, garlic powder, dried thyme, salt, and black pepper. Mix well.
Add the cooked and cubed chicken, shredded cheddar cheese, frozen mixed vegetables, and diced onions to the soup mixture. Stir until all ingredients are evenly coated.
Transfer the chicken and vegetable mixture into a greased 9x13-inch baking dish, spreading it out evenly.
In a small bowl, combine the crushed crackers with the melted butter. Stir until the crackers are evenly coated.
Sprinkle the buttery cracker mixture evenly over the casserole.
