Ingredients:
For the Pork Chops:

4 bone-in or boneless pork chops (1-inch thick)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
For the Scalloped Potatoes:

4 large russet potatoes, peeled and thinly sliced
1 cup heavy cream
1 cup whole milk
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
2 tablespoons butter, for greasing the baking dish
Fresh parsley, chopped (for garnish)
Directions:
For the Pork Chops:

Preheat your oven to 375°F (190°C).
Pat the pork chops dry with paper towels, and season both sides with garlic powder, onion powder, salt, pepper, and thyme.
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the pork chops and sear them for 3-4 minutes per side, until golden brown. Remove from the skillet and set aside.
For the Scalloped Potatoes:

Grease a 9x13-inch baking dish with butter.
Arrange the sliced potatoes in overlapping layers in the prepared dish.
In a medium saucepan, combine the heavy cream, milk, garlic powder, onion powder, salt, and pepper. Heat over medium heat, stirring occasionally, until the mixture is warm but not boiling.
Pour the cream mixture evenly over the layered potatoes.
Sprinkle the shredded cheddar cheese on top.
Cover the baking dish with aluminum foil and bake for 40 minutes.
After 40 minutes, remove the foil and continue baking for another 20-25 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
Once baked, remove from the oven and set aside to cool slightly.
