Ingredients:
8 oz elbow macaroni or your favorite pasta shape
1 lb shrimp (peeled and deveined), or a mix of seafood like crab or lobster
2 tbsp butter
1 small onion, finely chopped
2 cloves garlic, minced
2 tbsp all-purpose flour
2 cups whole milk
1 cup heavy cream
2 cups shredded sharp cheddar cheese
1 cup grated Parmesan cheese
1/2 tsp paprika
1/2 tsp garlic powder
Salt and pepper, to taste
2 tbsp fresh parsley, chopped (optional for garnish)
1/4 cup breadcrumbs (optional for topping)
Directions:
Cook the Pasta: In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Cook the Seafood: In a large skillet, heat 1 tablespoon of butter over medium heat. Add the seafood (shrimp, crab, or lobster) and cook for 2-3 minutes or until the shrimp turns pink and the seafood is cooked through. Remove from the skillet and set aside.

Make the Cheese Sauce: In the same skillet, melt the remaining tablespoon of butter. Add the chopped onion and garlic, cooking until soft and fragrant, about 2 minutes. Stir in the flour and cook for 1-2 minutes, until the mixture turns golden.

Add the Dairy: Slowly whisk in the milk and heavy cream, stirring continuously to prevent lumps. Bring the mixture to a simmer and cook for 3-5 minutes, until the sauce thickens.
