1 cup onion, diced

1 can (10 oz) diced tomatoes with green chilies, undrained
1 cup corn kernels (fresh, frozen, or canned)
1 cup shredded cheddar cheese (or Mexican blend)
1 cup sour cream
1 bag of tortilla chips, crushed (about 3 cups)
1 cup lettuce, shredded
½ cup diced tomatoes

Directions:

Cook the Ground Beef: In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onions and cook for 2-3 minutes until softened. Add the ground beef to the pan, breaking it apart with a spoon. Cook until browned and fully cooked, about 7-8 minutes. Drain any excess fat.
