Introduction:
The Smacked Cucumber Salad is a popular dish that has gained attention for its unique preparation and bold flavors. This vibrant and refreshing recipe involves gently smashing cucumbers, which enhances their natural crunch while allowing the marinade to penetrate deeper into the flesh. It’s perfect for a quick appetizer, a side dish, or a light meal that brings together the best of fresh vegetables with a delightful balance of sweet, tangy, and savory notes. This dish can be easily adapted to suit different tastes, and it’s an excellent choice for those looking to add a crunchy, flavorful option to their table.
Ingredients:
2 medium cucumbers (preferably English cucumbers)
1 tablespoon sesame oil
2 tablespoons rice vinegar
1 tablespoon soy sauce (or tamari for gluten-free)
1 teaspoon sugar
1 garlic clove, minced
1 teaspoon fresh ginger, grated
1/2 teaspoon chili flakes (optional, for a spicy kick)
1 tablespoon toasted sesame seeds
Fresh cilantro or mint leaves (for garnish)
Directions:
Prepare the cucumbers: Rinse the cucumbers and cut off the ends. Place them on a cutting board and, using the side of a chef’s knife or a mallet, gently smack each cucumber a few times to break it into large chunks. This helps the cucumber absorb the dressing better.
Cut the cucumbers: After smashing, slice the cucumbers into bite-sized pieces.
Make the dressing: In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, sugar, minced garlic, grated ginger, and chili flakes until the sugar dissolves and the dressing is well combined.
Toss the cucumbers: Place the cucumber pieces in a bowl, pour the dressing over them, and toss everything together so the cucumbers are evenly coated. Let the salad sit for 10-15 minutes to allow the flavors to meld.
Serve: Just before serving, sprinkle with toasted sesame seeds and garnish with fresh cilantro or mint leaves for an extra burst of freshness.
