Introduction:

Churrasco, a beloved Latin American dish, is a flavorful grilled skirt steak that’s marinated to perfection and cooked over an open flame for a smoky, charred finish. This recipe captures the essence of traditional Brazilian and Argentine barbecue, offering a juicy, tender steak with a delightful combination of spices, citrus, and garlic. Whether you’re grilling outdoors or using a stovetop grill, Churrasco is an easy and delicious dish to serve at any summer gathering or family meal.

Ingredients:

1½ lbs (700g) skirt steak (trimmed)
4 cloves garlic (minced)
1/4 cup olive oil
1/4 cup fresh lime juice (about 2 limes)
2 tbsp red wine vinegar
1 tbsp honey or brown sugar
1 tsp ground cumin
1 tsp smoked paprika
1 tsp dried oregano
1/2 tsp ground black pepper
1 tsp salt
1/4 tsp crushed red pepper flakes (optional for a kick)
Fresh cilantro or parsley (for garnish, optional)
Directions:

Prepare the Marinade: In a bowl, combine the garlic, olive oil, lime juice, red wine vinegar, honey (or brown sugar), cumin, paprika, oregano, black pepper, salt, and crushed red pepper flakes (if using). Whisk the mixture until well blended and the honey or sugar dissolves completely.

Marinate the Steak: Place the skirt steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it's fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for deeper flavor.

Prepare the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn down to a glowing white. For a gas grill, set it to medium-high. Make sure the grill grates are clean and lightly oiled to prevent the steak from sticking.

Grill the Skirt Steak: Remove the skirt steak from the marinade and let any excess drip off. Place the steak on the grill and cook for 4-5 minutes per side for medium-rare, or longer if you prefer your steak cooked more thoroughly. Skirt steak is best when slightly charred on the outside but tender and juicy on the inside.

Rest the Steak: Once grilled to your liking, remove the steak from the grill and let it rest for about 5 minutes before slicing. This allows the juices to redistribute and ensures a more flavorful steak.

Slice and Serve: Slice the skirt steak against the grain into thin strips. This will ensure the meat remains tender and easy to chew. Serve with your favorite sides like grilled vegetables, rice, or a tangy chimichurri sauce for an authentic touch.
