Ingredients:
2 large eggs
1 cup fresh spinach (washed and chopped)
2 slices whole-grain bread (or your preferred type of bread)
1 tablespoon olive oil or butter
1 slice of cheese (optional, cheddar or mozzarella work best)
Salt and pepper, to taste
1 tablespoon mayonnaise or your favorite spread (optional)
A pinch of garlic powder or paprika (optional)
Directions:
Prepare the spinach: Heat a skillet over medium heat and add the olive oil or butter. Once hot, toss in the chopped spinach and sauté for about 2-3 minutes until wilted. Season with a pinch of salt and pepper. Remove from the skillet and set aside.
Cook the eggs: In the same skillet, crack the eggs into the pan. You can fry them sunny-side-up, scramble them, or cook them to your liking. Season with salt, pepper, and any additional seasonings (like garlic powder or paprika). If you prefer a melted cheese effect, add a slice of cheese on top of the eggs during the last minute of cooking and cover with a lid to melt.
Toast the bread: While the eggs are cooking, toast your bread slices to your desired crispiness. You can use a toaster or lightly butter them and toast them in a separate skillet.
Assemble the sandwich: Spread mayonnaise (or your preferred spread) on one side of each slice of toasted bread. Layer the sautéed spinach on one slice, followed by the cooked eggs. Top with the other slice of bread.
Serve: Slice the sandwich in half and serve hot.
