These crispy, bite-sized potatoes are topped with a delicious combination of cheese, bacon, and sour cream, delivering all the flavors of a loaded baked potato in one little pop. Ingredients:
10 medium-sized russet potatoes
1/2 cup cheddar cheese, shredded
1/2 cup cooked bacon, crumbled
1/4 cup sour cream
2 tablespoons green onions, chopped
1 tablespoon olive oil
Salt and pepper to taste
1/4 teaspoon garlic powder
1/4 teaspoon paprika
Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
Wash and scrub the potatoes. Slice them into 1-inch thick rounds.
Drizzle the olive oil over the potato rounds and sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat evenly.
Arrange the potato slices in a single layer on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the potatoes are golden and crispy on the edges.
Remove from the oven and top each potato bite with shredded cheddar cheese and crumbled bacon. Return to the oven for an additional 5 minutes or until the cheese melts.
Once done, remove from the oven and let cool for a couple of minutes.
