2 tbsp butter or olive oil
1/2 cup grated Parmesan or vegan cheese substitute
1 tsp Dijon mustard
A pinch of nutmeg

Directions
Prepare the vegetables:
Preheat your oven to 375°F (190°C). Toss the cauliflower florets, carrots, zucchini, and red bell pepper with olive oil, thyme, paprika, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes until tender and slightly caramelized.

Cook the sauce:
