Introduction
There’s something magical about a meal so delicious that even the pickiest eater can’t resist. My hubby, though he won’t admit it, often finds himself going back for seconds… and thirds. This one-pot recipe has become a household favorite, combining rich flavors and hearty ingredients into a dish that’s as easy to make as it is satisfying. Perfect for weeknight dinners or casual gatherings, this meal is bound to become a staple in your kitchen too.

Ingredients
Protein of choice: 1 lb of chicken, beef, or tofu (cubed)
1 medium onion, finely chopped
3 cloves of garlic, minced
2 cups of vegetables (e.g., carrots, bell peppers, peas, or zucchini)
1 cup of uncooked rice or pasta
4 cups of broth (chicken, beef, or vegetable)
1 cup of crushed tomatoes or tomato sauce
1 tsp smoked paprika
1 tsp dried oregano
1 tsp chili flakes (optional, for spice)
Salt and pepper to taste
2 tbsp olive oil
Fresh herbs (parsley or basil) for garnish
Directions
Prepare the Base: Heat olive oil in a large pot over medium heat. Add the onions and garlic, sautéing until fragrant and translucent.
Cook the Protein: Add your chosen protein and cook until browned on all sides.
Add Vegetables: Toss in your chopped vegetables, stirring them for 2–3 minutes to soften slightly.
Incorporate Dry Ingredients: Sprinkle in the smoked paprika, oregano, chili flakes, salt, and pepper. Stir to coat the ingredients evenly.
Pour the Liquid: Add the uncooked rice or pasta, broth, and crushed tomatoes. Stir well to combine.
Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for 20–25 minutes, stirring occasionally, until the rice or pasta is cooked and the liquid is absorbed.
Garnish and Serve: Sprinkle fresh herbs on top before serving. Pair with a slice of crusty bread or a side salad for a complete meal.
Serving and Storage Tips
Serving: This dish tastes best fresh, straight from the pot. Serve it warm and garnish with herbs or a sprinkle of grated cheese for added flavor.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or microwave, adding a splash of broth or water to retain moisture.
Freezing: This dish freezes well. Divide portions into freezer-safe containers and store for up to 3 months. Thaw overnight in the fridge before reheating.
