Ingredients:
1 lb (450g) of chicken breast or thigh fillets
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 cup vegetable broth
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
Fresh basil leaves for garnish
Optional: 1 cup cooked pasta or rice
Directions:
Heat the olive oil in a large skillet over medium-high heat. Add the chicken fillets and cook for 6-8 minutes per side, until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and minced garlic. Cook for 2-3 minutes until the onion becomes translucent.
Add the diced tomatoes, vegetable broth, balsamic vinegar, oregano, and paprika to the skillet. Stir everything together and let it simmer for 5 minutes.
Return the chicken to the skillet and spoon some of the sauce over the chicken. Let everything simmer together for an additional 5-7 minutes, allowing the flavors to meld.
Season with salt and pepper to taste, and garnish with fresh basil leaves.
