Introduction

Ingredients
4 bone-in pork chops
2 tbsp olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 tbsp Dijon mustard
1 tsp thyme (fresh or dried)
1 tsp rosemary (fresh or dried)
Salt and pepper to taste
1 tbsp cornstarch (optional, for thickening)
Fresh parsley, chopped (for garnish)
Directions
Prepare the Pork Chops: Season the pork chops with salt, pepper, and rosemary on both sides.
Sear the Pork Chops: Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 4-5 minutes on each side until golden brown. Remove the pork chops from the skillet and set them aside.
Cook the Aromatics: In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until they are soft and fragrant.
Make the Sauce: Add the chicken broth and Dijon mustard, stirring well to combine. Bring the mixture to a simmer. Then, stir in the heavy cream and thyme. Let it simmer for about 5 minutes to thicken.
Return Pork Chops to Skillet: Place the pork chops back into the skillet, ensuring they are coated with the sauce. Cover and simmer for 10-15 minutes, or until the pork chops are cooked through and tender.
Optional Thickening: If you prefer a thicker sauce, mix the cornstarch with a tablespoon of water to create a slurry and stir it into the sauce. Let it simmer for a few more minutes until thickened.
Serve: Once done, garnish with fresh parsley and serve.
