Directions
Prepare the Potatoes: Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly, pat them dry, and prick them several times with a fork. Place them directly on the oven rack and bake for 50-60 minutes, or until tender.
Scoop Out the Flesh: Once the potatoes have cooled slightly, cut each one in half lengthwise. Gently scoop out the flesh, leaving a thin layer intact to hold the shape of the skins. Place the potato flesh in a mixing bowl.
