Ingredients
For the Cake Layers:
1 ¾ cups (220g) all-purpose flour
¾ cup (65g) unsweetened cocoa powder
2 cups (400g) granulated sugar

2 large eggs, at room temperature
1 cup (240ml) whole milk
½ cup (120ml) vegetable oil
2 tsp vanilla extract
1 cup (240ml) boiling water
For the Fudge Frosting:
1 cup (230g) unsalted butter, softened
4 cups (500g) powdered sugar
¾ cup (65g) unsweetened cocoa powder
½ cup (120ml) heavy cream (plus more if needed)
2 tsp vanilla extract

Directions
Prepare the Cake Layers:
Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add the eggs, milk, vegetable oil, and vanilla extract. Mix until smooth and well combined.
Gradually add the boiling water, mixing until the batter is thin but smooth.
Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Make the Fudge Frosting:
Beat the butter in a large bowl until creamy.
Add the powdered sugar and cocoa powder gradually, mixing until combined.
Pour in the heavy cream, vanilla extract, and a pinch of salt, then beat on medium speed until fluffy and spreadable. Add more cream if needed for consistency.
Assemble the Cake:
Place one cake layer on a serving plate and spread a generous amount of fudge frosting on top.
Add the second layer and frost the top and sides of the cake.
Smooth the frosting or create decorative swirls as desired.
