Ingredients
For the Meatloaf:
1 ½ pounds ground beef (or a mix of beef and pork)
½ cup breadcrumbs (Italian-seasoned preferred)
½ cup grated Parmesan cheese
1 small onion, finely chopped
2 cloves garlic, minced
1 egg
½ cup marinara sauce (plus extra for topping)
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon Worcestershire sauce
½ cup shredded mozzarella cheese (for stuffing and topping)
For the Topping:
½ cup marinara sauce
¼ cup shredded mozzarella cheese
1 tablespoon chopped fresh parsley (optional)
Directions
Step 1: Prepare the Meatloaf Mixture
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, marinara sauce, oregano, basil, salt, pepper, and Worcestershire sauce. Mix until just combined—avoid overmixing to keep the meatloaf tender.
Step 2: Shape and Fill the Meatloaf
On a clean surface, flatten the meat mixture into a rectangle (about 1-inch thick).
Sprinkle half of the shredded mozzarella cheese in the center. Carefully roll or shape the meat mixture into a loaf, sealing the cheese inside. Place it into the prepared pan.
Step 3: Bake and Add Toppings
Spread ½ cup of marinara sauce evenly over the top of the meatloaf.
Bake for about 45-50 minutes or until the internal temperature reaches 160°F (71°C).
Sprinkle the remaining mozzarella cheese on top and bake for another 5-7 minutes until melted and bubbly.
Step 4: Serve and Enjoy
Let the meatloaf rest for 5-10 minutes before slicing. Garnish with fresh parsley and serve with extra marinara sauce on the side.
