For the Pork Chops:
4 bone-in or boneless pork chops
1 teaspoon salt

1 tablespoon olive oil

For the Scalloped Potatoes:
4 large russet potatoes, thinly sliced
1 small onion, thinly sliced
2 cups heavy cream or whole milk
2 tablespoons butter
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dried thyme
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
Directions
Step 1: Prepare the Pork Chops
Preheat your oven to 375°F (190°C).
In a small bowl, mix the salt, black pepper, garlic powder, onion powder, and paprika.
Pat the pork chops dry with a paper towel and season both sides with the spice mixture.
Heat olive oil and butter in a large skillet over medium-high heat.
Sear the pork chops for about 2 minutes on each side until golden brown. Remove them from the pan and set aside.
Step 2: Prepare the Scalloped Potatoes
In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 30 seconds.
Pour in the heavy cream (or milk), then add salt, black pepper, and dried thyme. Stir well and let it heat for about 2 minutes.
Layer half of the sliced potatoes in a greased baking dish, followed by half of the onion slices.
Sprinkle half of the cheddar and Parmesan cheese over the top.
Pour half of the cream mixture over the potatoes and repeat the layers.
Step 3: Combine and Bake
Place the seared pork chops on top of the potato layers.
Cover the dish with foil and bake for 45 minutes.
Remove the foil and bake for another 15 minutes, allowing the cheese to brown slightly.
Let the dish rest for 5–10 minutes before serving.
