Ingredients
For the Dough:
500g (4 cups) all-purpose flour
250ml (1 cup) warm water or milk
150g (¾ cup) sugar
100g (7 tbsp) unsalted butter, softened
12g (1 tbsp) fresh yeast or 4g (1 tsp) dry yeast
1 tsp salt
1 tsp vanilla extract (optional)
For the Filling:
250g (1 ½ cups) raisins
2 tbsp rum or warm water (to soak the raisins)
Directions
Step 1: Prepare the Raisins
Soak the raisins in warm water or rum for about 15–20 minutes to soften them. Drain and set aside.
Step 2: Make the Dough
In a small bowl, dissolve the yeast in warm water or milk with 1 tablespoon of sugar. Let it sit for about 10 minutes until it becomes frothy.
In a large mixing bowl, combine the flour, sugar, and salt.
Add the yeast mixture, softened butter, and vanilla extract (if using). Mix well until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
Gently fold in the soaked and drained raisins, making sure they are evenly distributed.
Step 3: First Rise
Place the dough in a greased bowl, cover with a clean cloth, and let it rise for about 2 hours or until doubled in size.
Step 4: Shape and Second Rise
After the dough has risen, punch it down slightly and shape it into a loaf.
Place it on a baking sheet lined with parchment paper. Cover again and let it rise for another hour.
Step 5: Bake the Bread
Preheat your oven to 180°C (350°F).
Bake for 30–35 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
