Ingredients
For the Cake:
500g quark cheese (or Greek yogurt as a substitute)
2 cans (about 300g each) of mandarin oranges, drained
200g digestive biscuits or graham crackers, crushed
100g unsalted butter, melted
100g sugar (or honey for a natural sweetener)
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 packet (8g) gelatin powder or 2 sheets of gelatin (optional for firmer texture)
For Topping (Optional):
A few mandarin slices for decoration
Whipped cream or a dusting of powdered sugar
Directions
Step 1: Prepare the Base
Crush the digestive biscuits or graham crackers into fine crumbs.
Mix the crumbs with the melted butter until well combined.
Press the mixture firmly into the bottom of a springform pan or a lined baking dish to create the crust. Refrigerate while preparing the filling.
Step 2: Make the Quark Filling
In a large bowl, mix the quark cheese, sugar, vanilla extract, and lemon juice until smooth.
Add the drained mandarins and gently fold them into the mixture. Use a spoon or spatula to mix evenly.
Step 3: Optional – Use Gelatin for Firmness
If using gelatin, dissolve it in a small amount of hot water and let it cool slightly before adding it to the quark mixture. Stir well.
