Introduction

Ingredients:
1 kg (2.2 lbs) potatoes, peeled
100 g (3.5 oz) fresh parsley, finely chopped
2 cloves garlic, minced
1 egg
50 g (1.8 oz) grated Pecorino Romano cheese (optional)
Salt and black pepper, to taste
100 g (3.5 oz) breadcrumbs, plus extra for coating

Instructions:
Boil the Potatoes: Place the peeled potatoes in a large pot of salted water. Bring to a boil and cook until they are fork-tender, about 20-25 minutes. Drain the potatoes and let them cool slightly.
Mash the Potatoes: Once cool enough to handle, mash the potatoes in a large mixing bowl. Use a potato masher or fork to create a smooth, lump-free texture.
Prepare the Croquette Mixture: Add the minced garlic, chopped parsley, grated Pecorino Romano (if using), egg, salt, and black pepper to the mashed potatoes. Mix thoroughly until all ingredients are well combined.
Form the Croquettes: With your hands, take a small amount of the mixture and shape it into small oval or round croquettes. Coat each croquette in breadcrumbs, ensuring it's fully covered.
Fry the Croquettes: Heat a generous amount of olive oil in a frying pan over medium heat. Once hot, carefully fry the croquettes in batches, turning them occasionally, until they are golden and crispy on all sides. This should take about 3-4 minutes per batch.
Drain and Serve: Remove the croquettes from the pan and place them on a paper towel to drain excess oil. Serve them hot, ideally with a side of Sicilian olives or a fresh salad.
