2 medium zucchinis, thinly sliced

3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon paprika
1/2 teaspoon turmeric
1 tablespoon olive oil
Salt and pepper to taste
1/2 cup grated mozzarella cheese (optional)

Instructions:

Preheat your oven to 375°F (190°C).
In a large pan, heat the olive oil over medium heat. Add the garlic and onions, sautéing for about 2 minutes until they become fragrant and translucent.
Add the sliced zucchini, carrots, eggplant, and bell pepper. Sauté for another 5-7 minutes, just until they start to soften.
Season the vegetables with salt, pepper, oregano, basil, paprika, and turmeric. Stir to combine and remove from heat.
In a large baking dish, start layering the vegetables, alternating each one. Begin with a layer of zucchini, followed by a layer of carrots, eggplant, bell peppers, and tomatoes. Repeat the layers until all the vegetables are used.
