Fritti Friars, or "fried friars," is a delightful and cherished dessert that hails from the heart of Sardinia and Tuscany. Traditionally prepared during the Carnival season, this crispy treat is beloved for its light and airy texture, dusted with a generous coating of powdered sugar. Ingredients:

300g all-purpose flour
50g sugar
1 teaspoon baking powder
A pinch of salt
2 large eggs
50ml milk
30ml white wine (optional, but traditional)
Zest of 1 lemon
1 tablespoon of olive oil
Vegetable oil (for frying)
Powdered sugar (for dusting)
Instructions:

Prepare the dough: In a large mixing bowl, combine the flour, sugar, baking powder, and a pinch of salt. Mix well. In a separate bowl, whisk the eggs, milk, and white wine (if using) together. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth dough forms.

Knead the dough: Turn the dough onto a lightly floured surface and knead it for about 5-7 minutes until it becomes soft and elastic. If the dough feels too sticky, sprinkle a little more flour as needed. Let the dough rest for 30 minutes covered with a damp cloth.

Shape the fritti: After resting, divide the dough into small portions. Roll each portion into a ball and flatten it into a round shape. Then, using your fingers, create a small hole in the center of each disk, forming a ring-like shape. Alternatively, you can shape the dough into twists or any form you prefer.

Fry the fritti: Heat the vegetable oil in a deep frying pan over medium heat. Test the oil temperature by dropping a small piece of dough into the pan; if it bubbles and rises to the surface, the oil is ready. Carefully drop the shaped dough into the hot oil, frying in batches to avoid overcrowding. Fry each fritto until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.

Dust with powdered sugar: While the fritti are still warm, generously dust them with powdered sugar. Serve immediately for the freshest and most delightful experience.

Serving and Storage Tips:

Fritti Friars are best enjoyed fresh and warm, right after they have been fried. However, if you need to store leftovers, place them in an airtight container and store them at room temperature for up to two days. You can also reheat them in a 180°C (350°F) oven for about 5 minutes to regain their crispy texture.

For an extra indulgent treat, serve them with a side of honey or your favorite fruit jam for dipping.
