Ingredients:

2 medium sweet potatoes, peeled and diced
1 cup butternut squash, peeled and cubed

1 tbsp maple syrup

1/2 tsp ground nutmeg
1/2 tsp smoked paprika

Instructions:

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a large bowl, toss the diced sweet potatoes, butternut squash, Brussels sprouts, and red onions with olive oil, maple syrup, cinnamon, nutmeg, smoked paprika, salt, and pepper. Make sure the vegetables are evenly coated with the mixture.
Spread the vegetables in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and caramelized, stirring halfway through to ensure even cooking.
