This classic dish, often rooted in necessity, brings together humble ingredients to create something far greater than the sum of its parts. Full of flavor and filling, it’s a reminder that comfort food doesn’t need to be expensive or complicated. Whether you’re feeding a crowd or just looking for a cozy dinner, Poor Man’s Stew is a dish that not only fills your belly but nourishes your spirit.
Ingredients:
1 lb ground beef or pork (or a combination)
3 medium potatoes, diced
2 carrots, peeled and sliced
1 onion, chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) kidney beans or any preferred beans, drained and rinsed
4 cups beef or vegetable broth
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
1 tbsp olive oil (for sautéing)
Instructions:
Brown the Meat: Heat a large pot over medium heat and add the olive oil. Once hot, add the ground meat and cook until browned, breaking it apart with a spoon. Season with salt and pepper.
Sauté the Vegetables: Add the chopped onion and minced garlic to the pot with the meat, cooking for 2-3 minutes until softened and fragrant.
Add the Potatoes and Carrots: Stir in the diced potatoes and sliced carrots. Cook for an additional 5 minutes, allowing them to absorb some of the flavors from the meat and onions.
Simmer the Stew: Pour in the diced tomatoes (with their juices) and the broth. Add the dried thyme and oregano. Stir everything together and bring the stew to a boil. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, or until the vegetables are tender.
Add the Beans: Stir in the beans and cook for another 5-10 minutes, allowing the flavors to meld together. Taste and adjust seasoning with more salt and pepper if needed.
Serve: Ladle the stew into bowls, and enjoy it hot, with crusty bread on the side if desired.
Serving and Storage Tips:
Serving: Serve the stew with a side of warm, crusty bread or over a bed of rice for a heartier meal. For an extra touch, sprinkle with grated cheese or a dollop of sour cream.
Storage: This stew keeps well in the fridge for up to 3-4 days in an airtight container. For longer storage, you can freeze the stew for up to 3 months. When reheating, add a splash of broth if the stew has thickened too much.
