Instructions:
In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 7-10 minutes.
While the chicken is cooking, prepare the quinoa according to the package instructions.
Once the chicken is done, add the chopped spinach, red bell pepper, and cherry tomatoes to the skillet. Stir to combine and cook for an additional 2-3 minutes, until the spinach wilts and the vegetables soften.
