2 cups of your favorite grain (rice, quinoa, or couscous)
1 lb (450g) protein of choice (chicken, tofu, or shrimp)
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, sliced
1 zucchini, diced
1 can (14 oz) diced tomatoes
1 tsp smoked paprika
½ tsp cumin
Salt and pepper to taste
½ cup vegetable or chicken broth
Fresh herbs for garnish (parsley or cilantro)
Instructions
Prepare the Base: Cook the grain according to package instructions and set aside.
Sauté the Aromatics: Heat olive oil in a pan over medium heat. Add onions and garlic, sauté until fragrant.
Cook the Protein: Add your protein of choice and cook until browned and fully cooked through. Remove and set aside.
Sauté the Vegetables: In the same pan, add bell peppers and zucchini. Stir for 3-4 minutes until slightly softened.
Simmer the Sauce: Pour in diced tomatoes, broth, smoked paprika, cumin, salt, and pepper. Let it simmer for 10 minutes.
Combine Everything: Add the cooked protein back to the pan and stir everything together. Let it cook for another 2 minutes.
