Ingredients:
For this celebratory dish, we’ve chosen a classic Victoria Sponge Cake, a favorite of British royalty.

Cake Ingredients:
1 cup (225g) unsalted butter, softened
1 cup (225g) granulated sugar
4 large eggs
2 cups (225g) self-rising flour
1 tsp vanilla extract
2 tbsp milk
Filling:
½ cup (120g) strawberry jam
1 cup (240ml) heavy whipping cream
2 tbsp powdered sugar
Topping:
Powdered sugar for dusting
Fresh strawberries (optional)
Directions:
Step 1: Prepare the Cake Batter
Preheat your oven to 350°F (180°C). Grease and line two 8-inch round cake tins with parchment paper.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Sift the flour and gently fold it into the mixture using a spatula. Add the milk and mix until smooth.
Step 2: Bake the Cake
Divide the batter evenly between the two cake tins.
Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack.
Step 3: Assemble the Cake
Once cooled, spread the strawberry jam over one of the cake layers.
In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. Spread the whipped cream over the jam.
Carefully place the second cake layer on top and dust with powdered sugar.
Serving and Storage Tips
Serve the cake fresh with a cup of tea for a truly royal experience.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Let the cake come to room temperature before serving for the best texture.
