Ingredients:
For the mashed potatoes:
4 large potatoes, peeled and cubed
1/2 cup milk (or more for desired consistency)
1/4 cup unsalted butter
Salt and pepper to taste
1/2 cup shredded cheddar cheese (optional)
For the ground beef layer:
1 lb ground beef
1 medium onion, finely chopped
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 cup frozen peas (or mixed vegetables)
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1 teaspoon dried thyme (optional)
For the topping:
1/2 cup grated cheese (cheddar, mozzarella, or a blend)
Fresh parsley for garnish (optional)
Instructions:
Prepare the mashed potatoes:
In a large pot, bring water to a boil. Add the cubed potatoes and cook until tender, about 12-15 minutes.
Drain the potatoes and return them to the pot. Add the butter and begin mashing.
Slowly add milk, continuing to mash until smooth and creamy. Season with salt and pepper to taste. For extra flavor, mix in shredded cheddar cheese if desired. Set aside.
Cook the ground beef mixture:
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onion and garlic to the skillet and cook until the onion becomes soft, about 3 minutes.
Stir in the diced tomatoes (with juices), peas, Worcestershire sauce, thyme, and salt and pepper. Let the mixture simmer for 5-7 minutes until the vegetables are heated through and the flavors are well combined.
Assemble the casserole:
Preheat your oven to 375°F (190°C).
In a greased 9x13-inch casserole dish, layer the ground beef mixture at the bottom.
Spread the mashed potatoes evenly on top of the beef layer, smoothing the surface with a spatula.
Sprinkle the grated cheese over the mashed potatoes.
Bake the casserole:
Place the casserole in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
Serve:
Once done, remove the casserole from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley if desired.
