Instructions
Prepare the Pumpkin: Peel and remove the seeds from the pumpkin. Cut it into small cubes for easier cooking.
Cook the Pumpkin: In a large saucepan, heat the vegetable oil over medium heat. Add the pumpkin cubes and cook until they soften and become tender, about 10-12 minutes. Stir occasionally to prevent burning.
Sauté the Aromatics: In another pan, sauté the chopped onion and minced garlic in a little oil until they turn golden and fragrant, about 5-6 minutes.
Combine Ingredients: Add the sautéed onions and garlic to the pumpkin. Stir in the tomato paste, paprika, ground coriander, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.
