Ingredients
For the Broccoli Bites:
2 cups broccoli florets (steamed and finely chopped)
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/2 cup breadcrumbs (regular or whole wheat)
2 large eggs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper to taste
Optional: 1 tablespoon chopped parsley for added freshness
For the Yogurt-Garlic Dressing:
1 cup plain Greek yogurt
1 small garlic clove, finely minced or grated
1 tablespoon lemon juice
1 teaspoon olive oil
Salt and pepper to taste
Optional: a pinch of dried dill or chopped fresh herbs for extra flavor
Instructions
Make the Broccoli Bites:
Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
Steam or blanch the broccoli until just tender. Drain and finely chop it using a knife or food processor. Let it cool slightly.
Combine all ingredients for the bites in a large bowl: chopped broccoli, cheddar, Parmesan, breadcrumbs, eggs, garlic powder, onion powder, salt, pepper, and parsley (if using). Mix until the mixture holds together when pressed.
Shape the mixture into small bite-sized patties or nuggets and place them on the prepared baking sheet.
Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy on the edges.
Prepare the Yogurt-Garlic Dressing:
In a small bowl, combine Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper. Mix well.
Let the dip sit in the fridge for at least 10 minutes before serving to let the flavors meld.
Serving and Storage Tips
Serving:
Serve the bites warm with the cool, creamy garlic yogurt dip on the side. Garnish with fresh herbs or a sprinkle of paprika for extra color.
Storage:
Store leftover bites in an airtight container in the fridge for up to 4 days. Reheat in the oven or air fryer to restore crispiness. The yogurt dip can be stored separately in the fridge for 3–4 days.
Freezing:
Freeze uncooked or cooked bites in a single layer on a tray, then transfer to a freezer bag. Reheat directly from frozen in the oven until warmed through and crisp.
