Whether you're looking to incorporate more vegetables into your diet or simply want a lighter meal option, this recipe is a must-try. Plus, these burgers are vegetarian, making them an excellent choice for those who prefer plant-based meals.
Ingredients
To prepare these tasty broccoli burgers, you will need:
500g of broccoli (fresh or frozen)
100g of breadcrumbs (whole wheat for a healthier option)
50g of grated Parmesan cheese
1 egg
1 clove of garlic, minced
1 tablespoon of olive oil
Salt and pepper to taste
1 teaspoon of paprika (optional, for extra flavor)
50g of mozzarella or another soft cheese (optional, for a gooey center)
Instructions
Step 1: Prepare the Broccoli
If using fresh broccoli, wash and cut it into florets. Boil or steam them for 5-7 minutes until tender.
Drain and let them cool slightly. Then, mash them with a fork or pulse them in a food processor until finely chopped.
Step 2: Make the Mixture
In a large bowl, combine the mashed broccoli, breadcrumbs, Parmesan cheese, egg, garlic, olive oil, salt, pepper, and paprika. Mix well until all the ingredients are evenly combined.
If using mozzarella, take a small handful of the mixture, flatten it, place a small piece of cheese in the center, and then cover it with more of the mixture, shaping it into a patty.
Step 3: Cook the Burgers
Heat a non-stick pan with a little olive oil over medium heat.
Cook each burger for 3-4 minutes per side, or until golden brown and crispy.
Alternatively, bake them in a preheated oven at 180°C (350°F) for 20 minutes, flipping them halfway through.
Serving and Storage Tips
Serve these burgers hot with a fresh salad, yogurt sauce, or inside a whole wheat bun for a more traditional burger experience.
They pair well with avocado, tomato slices, and a dollop of Greek yogurt or hummus.
Store leftovers in an airtight container in the fridge for up to 3 days.
To freeze, place the cooked patties on a tray, freeze them, and then transfer them to a sealed bag. Reheat in the oven or pan before serving.
