Coarse sea salt

Step 1: Selecting the Best Tomatoes
Choose firm, ripe tomatoes without blemishes or soft spots. The fresher the tomatoes, the better the final result.
Step 2: Washing and Drying
Thoroughly wash the tomatoes under running water to remove dirt and pesticides. Pat them dry with a clean towel and let them air dry completely. Any moisture can cause spoilage.
Step 3: Preparing the Tomatoes
You can preserve tomatoes whole, in halves, or as a puree, depending on your preference. If leaving them whole, pierce them slightly with a fork to help them absorb the preserving liquid.
Step 4: Layering with Salt
