Ingredients:
Base:

1 cup cooked quinoa (or brown rice)

1/2 cup shredded red cabbage

1/2 cup julienned carrots

1/2 cup sliced cucumbers

1/2 cup cherry tomatoes, halved

1/2 cup chopped yellow bell pepper

1/2 avocado, sliced

1/4 cup shelled edamame (steamed or boiled)

A handful of baby spinach or mixed greens

Optional Toppings:

Fresh chopped cilantro or parsley

A squeeze of lime

Dressing (Lemon Tahini):

2 tbsp tahini

1 tbsp lemon juice

2–3 tbsp warm water (to thin)

Instructions:

Prepare the base: Cook quinoa (or your chosen grain) according to package instructions. Let it cool slightly.

Chop and arrange vegetables: Wash and cut all the veggies. Try to arrange them in sections for a true “rainbow” effect.

Make the dressing: In a small bowl, whisk together tahini, lemon juice, maple syrup, garlic, salt, and pepper. Add warm water gradually until the dressing reaches your desired consistency.
