A handful of baby spinach or mixed greens
Optional Toppings:
Sesame seeds or hemp hearts
Fresh chopped cilantro or parsley
A squeeze of lime
Dressing (Lemon Tahini):
2 tbsp tahini
1 tbsp lemon juice
1 tsp maple syrup
1 clove garlic, minced
2–3 tbsp warm water (to thin)
Salt and pepper to taste
Instructions:
Prepare the base: Cook quinoa (or your chosen grain) according to package instructions. Let it cool slightly.
Chop and arrange vegetables: Wash and cut all the veggies. Try to arrange them in sections for a true “rainbow” effect.
Make the dressing: In a small bowl, whisk together tahini, lemon juice, maple syrup, garlic, salt, and pepper. Add warm water gradually until the dressing reaches your desired consistency.
Assemble the bowl: Start with a bed of greens, then layer on the quinoa and the rainbow of vegetables. Top with edamame and avocado slices.
Drizzle and garnish: Pour the lemon tahini dressing over the bowl and sprinkle with your favorite toppings.
Serve fresh and enjoy!
