Ingredients:
1 tablespoon olive oil
1 large yellow onion, chopped
3 garlic cloves, minced
3 celery stalks, sliced
3 large carrots, diced
1 small head of green cabbage, chopped
1 zucchini, chopped
1 cup broccoli florets
1 cup cauliflower florets
1 cup kale or spinach, chopped
1 (15 oz) can diced tomatoes (no salt added)
6 cups low-sodium vegetable broth
Juice of 1 lemon
1 teaspoon turmeric powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley or cilantro, for garnish
Preparation:
Heat the olive oil in a large soup pot over medium heat.
Add the onion and garlic. Sauté for 3-4 minutes, until fragrant.
Add carrots, celery, and cabbage. Cook for another 5-7 minutes, stirring occasionally.
Add zucchini, broccoli, cauliflower, diced tomatoes, and broth. Stir in turmeric, cumin, paprika, salt, and pepper.
