Ingredients
For the crust and topping:

2 ½ cups all-purpose flour

1 cup unsalted butter, softened

1 cup granulated sugar

½ teaspoon baking powder

For the filling:

16 oz (450 g) cream cheese, softened

2 large eggs

1 teaspoon vanilla extract

1 cup powdered sugar

Preparation
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Prepare the crust and topping: In a large mixing bowl, combine flour, baking powder, salt, and sugar. Add softened butter and use your hands or a pastry cutter to blend until the mixture resembles coarse crumbs. Reserve about 1 cup of this mixture for the topping.

Press the remaining crumb mixture firmly into the bottom of the prepared baking pan to form an even crust layer. Bake for about 12-15 minutes or until lightly golden. Remove from oven and set aside.

Make the filling: In a separate bowl, beat the cream cheese until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and powdered sugar until the filling is well combined and smooth.

Pour the filling evenly over the warm crust layer. Sprinkle the reserved crumb topping evenly over the cream cheese layer.

Bake for 35-40 minutes until the topping is golden brown and the filling is set but still slightly soft in the center. Avoid overbaking to keep the filling creamy.

Cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours to help the bars set and make cutting easier.
