Fluffy White Pillows: A Recipe for Sweet Cloud Dumplings

Introduction:
White pillows are a staple in many households due to their clean and crisp appearance—inviting, comforting, and peaceful. In the culinary world, we pay homage to that same sense of softness and purity with these “White Pillows”—sweet cloud dumplings filled with vanilla cream and wrapped in tender steamed dough. This recipe transforms the comfort of white pillows into a light, delicious dessert perfect for lazy weekends or special occasions.

Ingredients:

For the Dough:

2 cups all-purpose flour

½ tsp salt

¾ cup warm milk

2 tbsp sugar

2 tsp instant yeast

1 tbsp vegetable oil

For the Filling:

½ cup mascarpone or cream cheese

3 tbsp powdered sugar

1 tsp vanilla extract

Optional Topping:

Powdered sugar for dusting

Fresh fruit or berry compote for serving

Preparation:

In a bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.

In a large mixing bowl, mix flour and salt. Add in the yeast mixture and oil. Knead until soft and elastic (about 8–10 minutes). Cover and let rise until doubled, about 1 hour.

In a separate bowl, whip together the mascarpone, powdered sugar, and vanilla extract until smooth. Chill in fridge.

Once dough has risen, divide into 10–12 portions. Flatten each piece into a circle, add a spoonful of filling in the center, and pinch the edges to seal.

Steam the dumplings over medium heat for 12–15 minutes or until puffed and glossy.

Serving and Storage Tips:

Serve warm with a dusting of powdered sugar and a spoonful of fresh fruit or berry compote.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat by steaming or microwaving gently with a damp paper towel.
