Ingredients
1½ pounds ground beef (preferably 80/20)
½ pound ground pork (optional, for added juiciness)
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup fresh breadcrumbs or crushed crackers
½ cup whole milk
2 large eggs, beaten
⅓ cup ketchup (plus extra for topping)
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika (optional)
Fresh parsley, chopped (for garnish)
Preparation
Preheat Oven: Set your oven to 350°F (175°C). Lightly grease or line a loaf pan with parchment paper.
Mix Wet Ingredients: In a small bowl, soak the breadcrumbs in milk until softened. In a large bowl, combine ground beef and pork.
Add Flavor: Add the softened breadcrumbs, onions, garlic, beaten eggs, ketchup, Worcestershire sauce, mustard, thyme, salt, pepper, and smoked paprika to the meat mixture.
Combine: Gently mix everything until just combined. Avoid overmixing to keep the meatloaf tender.
Shape and Bake: Transfer the mixture to the loaf pan or shape into a loaf on a baking sheet. Spread an even layer of ketchup on top for that classic glaze.
Bake: Place in the oven and bake for 55–65 minutes, or until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
