Introduction
If you love the creamy, savory taste of quiche but want to skip the carb-heavy crust, this crustless quiche with bacon is the perfect recipe for you. It’s a rich, satisfying dish that balances smoky bacon with fluffy eggs and melty cheese — all baked into a golden, crust-free delight. Whether for breakfast, brunch, or a light dinner, this quiche is easy to prepare and sure to please a crowd or just yourself.

Ingredients
8 large eggs

1 cup heavy cream or whole milk

6 strips bacon

1 cup shredded cheddar cheese (or your favorite cheese)

1/2 cup diced onion (optional)

1/2 cup chopped spinach or other greens (optional)

1/4 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder (optional)

Fresh herbs for garnish (chives, parsley, or thyme)

Preparation
Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan lightly with butter or cooking spray.

Cook the bacon in a skillet over medium heat until crisp. Remove and place on paper towels to drain, then crumble into small pieces.

If using onions or spinach, sauté them lightly in the bacon fat until softened, then remove from heat.

In a large mixing bowl, whisk together the eggs, cream (or milk), salt, pepper, and garlic powder until fully combined and slightly frothy.

Add the cooked bacon, sautéed vegetables (if any), and shredded cheese to the egg mixture. Stir to combine.

Pour the mixture into the prepared pie dish.

Bake in the preheated oven for 30-35 minutes, or until the quiche is set in the center and golden on top. A knife inserted should come out clean.

Let cool for about 5-10 minutes before slicing to help it set properly.

Serving and Storage Tips
Serve warm or at room temperature, accompanied by a light salad or fresh fruit for a balanced meal.

Leftovers keep well in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.

You can also freeze slices wrapped tightly in plastic wrap and foil for up to 1 month; thaw overnight in the fridge before reheating.
