Ingredients:

  • 1 lb ground beef or ground turkey

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 1 red bell pepper, diced

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp chili powder

  • ½ tsp salt (adjust to taste)

  • 1 cup canned black beans, rinsed and drained

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 cup cooked rice (white or brown)

  • 1 cup shredded cheddar or Mexican cheese blend

  • Juice of ½ lime

  • Fresh cilantro, chopped (for garnish)

  • Optional toppings: avocado slices, sour cream, hot sauce

Preparation:

  1. Heat the olive oil in a large skillet over medium heat. Add diced onions and red bell pepper, sautéing until softened (about 4 minutes).

  2. Add the garlic and cook for another 30 seconds until fragrant.

  3. Add the ground beef or turkey. Cook until browned, breaking it apart as it cooks.

  4. Sprinkle in the cumin, paprika, chili powder, and salt. Stir well to coat the meat and vegetables in the spices.

  5. Stir in the black beans, corn, and rice. Let it heat through for 2–3 minutes.

  6. Turn off the heat and sprinkle shredded cheese evenly over the top. Cover the skillet with a lid until the cheese melts (about 2 minutes).

  7. Finish with a squeeze of fresh lime juice and a sprinkle of chopped cilantro.
