Ingredients:

1 lb ground beef or ground turkey

½ tsp salt (adjust to taste)

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup cooked rice (white or brown)

1 cup shredded cheddar or Mexican cheese blend

Preparation:

Heat the olive oil in a large skillet over medium heat. Add diced onions and red bell pepper, sautéing until softened (about 4 minutes).

Add the garlic and cook for another 30 seconds until fragrant.

Add the ground beef or turkey. Cook until browned, breaking it apart as it cooks.

Sprinkle in the cumin, paprika, chili powder, and salt. Stir well to coat the meat and vegetables in the spices.
