Easy Chicken Fried Rice

quick and tasty meal that’s better than takeout—ready in 30 minutes!

Ingredients (Serves 4)

For the Chicken:

  • 1 lb chicken, diced (or shrimp/tofu)
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (or hoisin sauce)
  • 1 tsp cornstarch (keeps chicken juicy)
  • ½ tsp sesame oil

For the Fried Rice:

  • 3 cups cooked rice, cold (day-old works best!)
  • 3 tbsp oil (peanut or avocado oil)
  • 2 eggs, beaten
  • 3 garlic cloves, minced
  • 1 small onion, diced
  • 1 cup mixed veggies (carrots, peas, bell peppers)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp black pepper
  • 2 green onions, sliced
