Easy Chicken Fried Rice
A quick and tasty meal that’s better than takeout—ready in 30 minutes!
Ingredients (Serves 4)
For the Chicken:
- 1 lb chicken, diced (or shrimp/tofu)
- 1 tbsp soy sauce
- 1 tbsp oyster sauce (or hoisin sauce)
- 1 tsp cornstarch (keeps chicken juicy)
- ½ tsp sesame oil
For the Fried Rice:
- 3 cups cooked rice, cold (day-old works best!)
- 3 tbsp oil (peanut or avocado oil)
- 2 eggs, beaten
- 3 garlic cloves, minced
- 1 small onion, diced
- 1 cup mixed veggies (carrots, peas, bell peppers)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- ½ tsp black pepper
- 2 green onions, sliced
