Instructions
Step 1: Prep the Chicken
✔ Mix chicken with soy sauce, oyster sauce, cornstarch, and sesame oil. Let sit 15 minutes.
Step 2: Cook Everything Separately
✔ Scramble eggs – Heat 1 tbsp oil in a pan. Cook eggs until set, then remove. ✔ Cook chicken – Add 1 tbsp oil, sear 3–4 minutes, then remove. ✔ Sauté garlic & onion – Cook for 30 seconds.
Step 3: Stir-Fry the Rice
✔ Add veggies, stir-fry for 2 minutes. ✔ Add rice, press into the pan to crisp up for 2 minutes. ✔ Drizzle soy sauce, oyster sauce, and pepper, mix well. ✔ Return chicken & eggs, stir in green onions.
Step 4: Serve & Enjoy!
✔ Top with chili oil, lime, or cilantro for extra flavor. ✔ Serve hot!

✔ Use a big pan—don’t crowd the ingredients. ✔ Press rice down in the pan for crispy bits. ✔ Add sauces at the edges to boost flavor.
