  • 80 g of icing sugar
  • Juice and zest of 1 lemon
  • Grated coconut  (for decoration)
  • A pinch of salt

  • Blender  or food processor
  •  Mixing bowl
  • Spoon  for portioning
  • Baking paper  (optional, for storing the truffles)

2. Preparation of Lemon Truffles

2.1. Step 1: Blend the Biscuits

  1. Blending the Cookies : Place the dry cookies in a blender and blend until they form a fine powder. If you don’t have a blender, you can place the cookies in a plastic bag and crush them with a rolling pin.
